Spicy Salmon

Ingredients (serve 4)

500g salmon fillets
(boneless and skinless)
300g sour cream
1 bunch asparagus (cut in small pieces)
1 tablespoon chives (cut in 1cm length)
2 small chillies (chopped)
1 teaspoon sea salt
1 teaspoon freshly cracked black pepper
2 tablespoons cooking oil (olive oil or vegetable oil)
250g Penne pasta

Method

1. Cook pasta according to the instruction on the packet
2. Put a non-stick pan on the stove, medium heat
3. Once the oil is hot, place salmon fillets in the pan and cook for 3 minutes each side
4. Add asparagus, chives and sea salt
5. Stir sour cream in and let it simmer for 2 minutes

6. Serve in a bowl with chillies and black pepper
