Snapper in a rocket 🚀

Ingredients:

50 g baby rocket
50 g baby spinach
200 g snapper fillet (pin-boned)
1 Lebanese cucumber (thinly sliced)
2 tomatoes (thinly sliced)
1/2 red onion (thinly sliced)
1/4 cup of lime juice
1 teaspoon chilli (chopped)
1/4 teaspoon castor sugar
1 teaspoon fish sauce
1 teaspoon garlic (crushed)

Method:

1. Grill snapper fillet on a grill pan, 5 minutes each side, rest on the paper towel
2. For dressing, add lime juice, chilli, sugar, fish sauce and garlic in a mug, stir until well combined
3. Add rocket, spinach, cucumber, sliced tomato and onion on a serving plate top with grilled snapper
4. Add salad dressing before serving
