Red chicken pie (in the sky)


200 grams of chicken breast (cut into small pieces)
1 tablespoon red curry paste
270 ml coconut cream
1 teaspoon fish sauce
1/2 teaspoon brown sugar
1/2 teaspoon ground ginger
1/4 cup of frozen peas
1 cup of basil
3 medium-sized of potatoes (boiled and mashed)
1/4 cup of grated Parmesan cheese


1. Preheat the oven to 200C
2. Put coconut cream into a saucepan, bring to the boil
3. Add curry paste into coconut cream and let it simmer for 3 minutes
4. Add chicken, fish sauce, brown sugar and ground ginger and cook for another 3 minutes
5. Stir frozen peas and basil into the sauce and turn the stove off
6. Put curry sauce in an ovenproof dish, top with mashed potato and sprinkle with Parmesan cheese
7. Bake in the oven for 20 minutes or until the potato and cheese are golden
